While traditional citrus provides a sharp, "monolithic" spike of acidity, this session focuses on how alternative organic acids create structure, length, and chemical stability in your drinks. You'll learn to apply these principles by building 4 distinct Daiquiri variations, swapping traditional lime juice for engineered acid blends. The Experience: Explore the "molecular architecture" of a cocktail by moving beyond traditional citrus. This session breaks down how different organic acids—Citric, Malic, Lactic, Tartaric, and Acetic—function as the structural backbone of a balanced drink, specifically the Daiquiri. We will dive into the science of "pH Engineering" to create custom "sour" solutions that provide immediate freshness, long-lasting tartness, or savory complexity without the rapid oxidation of fresh juice.
The Cocktails: Sip four distinct versions of the classic Daiquiri, each professionally balanced by Chris to demonstrate a different application of alternative acidity.
The Pro-Skills: Learn to move past the "monolithic" acid spike of traditional citrus to create drinks with a sustained flavor experience. Understand how engineered acid structures prevent the rapid oxidation of volatile terpenes, extending the shelf-life of delicate infusions.
The Menu:
The Pseudo-Lime Daiquiri: A study in precision using a lab-engineered "sour" solution that mimics the 5–7% citric acid content of a lime without the volatile organic compounds of fresh fruit.
The Crystal Clear Daiquiri: Utilizing clarified lime juice to showcase how removing solids changes the visual and sensory impact of a high-citric cocktail.
The Milk-Washed Daiquiri: A demonstration of how lactic acid interacts with milk proteins to remove bitterness and create a silky-smooth texture.
The Acid-Adjusted Fruit Daiquiri: Explore how a low-acid juice (like orange or pineapple) is "engineered" with malic or citric acid to reach the pH of a lime, creating a vibrant, balanced profile.
